Biting the spring

February 4 marks the beginning of the period lichun, which is the beginning of spring in the Chinese lunar calendar. That day, there are many regions following the custom of eating spring rolls, pancakes and spring radishes. This custom is called 咬春yǎo chūn, yao chun;  which literally means “biting the spring.”
